Say hello to Domaine Sicard

Adding new wines to the Languedoc Wines collection is always a thoughtful process. Every bottle has to feel right, not just on its own, but as part of the wider range we are building. This week, we have added four new wines from Domaine Sicard, and they are wines we have been genuinely excited to share.

What drew us to these wines was their balance. They are expressive without being overwhelming, structured without feeling heavy, and always food led. Together, they show different sides of the Languedoc, from freshness and lift to depth and complexity, while still feeling cohesive.

The white wine in this release is a Viognier that immediately stood out for its clarity and restraint. In the glass, it shows a pale gold robe with subtle green reflections. The nose offers delicate floral aromas, gentle spice, and notes of gooseberry and dried fruits. On the palate, the wine is rounded and smooth, supported by freshness and a clean, lightly mineral finish. It works beautifully with chicken dishes, creamy sauces, or lightly spiced food, but is equally enjoyable on its own.

The AOC Minervois Rosé is a more textured style, made using the saignée method to give both freshness and presence. Its grenadine pink colour is bright and inviting. On the nose, it is elegant and gourmand, with soft red fruit and a subtle amyl note. The palate is full and rounded, balanced by refreshing acidity and a tangy structure that carries through to the finish. This is a rosé made for the table, pairing easily with red and white meats, poultry, tapas, and dishes with a little spice.

The two red wines in the collection show the more structured side of the Languedoc. Hommage à Elie is a Minervois red aged for eighteen months in oak, offering depth, complexity, and ageing potential. It shows intense aromas of spice, vanilla, and toasted dried fruits, with a dense palate layered with cocoa and exotic spice, supported by firm, textured tannins.

Cuvée Jean Claude Dreyfus comes from old vines and is vinified using carbonic fermentation, resulting in a wine that is both expressive and structured. Aromas of blackberry, pepper, and bay leaf lead into a full bodied palate with dark fruit, subtle floral notes, and a long, lingering finish.

Together, these four wines feel like a natural extension of Languedoc Wines. They are wines chosen for balance, authenticity, and their ability to shine at the table. They are now live on the website and ready to be discovered, whether you are looking for something fresh, vibrant, or more structured and age worthy.
