Grape Variety:

Explore the Signature 100% Mauzac: An Extra Brut from the Heart of the Pyrenees

The Wine:

This exceptional vintage is crafted from 100% native Mauzac grapes, showcasing a unique "signature" cuvée that blends the best of Mediterranean and Pyrenean vineyards. With a dosage of 6g/L (Extra Brut), this wine strikes a perfect balance of freshness and complexity, offering a refined and vibrant experience.

Winegrowing:

Our vineyards, certified Terra Vitis and in conversion to organic farming since 2020, benefit from the fertile clay and limestone soils of the foothills of the Pyrenees. With yields of less than 50HL/HA, each bottle reflects the care and dedication poured into our sustainable viticulture.

Winemaking:

The grapes are hand-harvested and undergo a slow, gentle pressing (at less than 1.2 bar) to retain the purest flavors. Aged for an average of 30 months on lattes, the wine is further refined with a dosage using a solera of reserve wines, enhancing its depth and elegance.

Tasting Notes:

  • Color: An alluring golden hue that glistens in the glass.
  • Aroma: Delicate aromas of quince, orchard fruits, and a hint of white flowers.
  • Palate: Complex and refreshing, with bright pear notes and subtle spices that linger gracefully.

Pairing:

Perfect as an aperitif, or pair it with fish in a cream sauce or fresh goat cheese to elevate your meal.
