Discover the Elegance of 100% Chardonnay: A Pure Expression of Altitude Vineyards

The Wine:

This vintage-dated Chardonnay is crafted from a special selection of altitude-grown grapes, carefully chosen for their unique expression. With a strong influence from our expertise in sparkling winemaking, this wine offers a distinctive and refined profile.

Winegrowing:

Our vineyards are situated on the foothills of the Pyrenees, benefiting from clay and limestone soils that contribute to the wine’s exceptional minerality. With yields of less than 50HL/HA, the grapes are grown at high altitudes, ensuring their purity and concentration.

Winemaking:

The grapes undergo a slow and gentle pressing (at less than 1.2 bar) to extract only the brightest and freshest juices. Low temperature fermentationpreserves the delicate aromas, while aging on fine lees during winter enhances the complexity. This wine is made without oak, allowing the fruit character to shine through clearly.

Tasting Notes:

  • Color: A crystal-clear yellow with light green reflections, showcasing its freshness.
  • Aroma: Fresh and powerful, dominated by vibrant notes of orchard fruits and white peach.
  • Palate: Crisp and refreshing, with citrus notes that lead to a bright, clean finish.

Pairing:

This elegant Chardonnay pairs beautifully with grilled vegetables, baked fish, and matured cheeses, making it a versatile choice for a range of dishes
