Grape Variety: Grenache, Syrah, Mourvèdre, Cardigan

Rich and Spicy Red Blend: 60% Syrah, 20% Grenache, 10% Carignan, 10% Mourvèdre
The Wine:
This bold and complex red wine is a blend of 60% Syrah, 20% Grenache, 10% Carignan, and 10% Mourvèdre. Grown in sandy-clay soils with a limestone basement, the wine reflects its terroir with rich, concentrated flavors and a balanced structure.
Winemaking:
The grapes are manually harvested and carefully selected by plot to ensure only the best fruit is used. Separate vinification is done for each variety, and the wine is aged for 12 months in barrels (with Carignan aged in Flextank). This process contributes to its deep complexity and structure.
Tasting Notes:
- Color: A striking garnet velvet dress that invites you to explore the wine’s depth.
- Aroma: The nose is filled with fruit compotes, muscat leather, and menthol scents, offering a rich and layered fragrance.
- Palate: Concentrated and tannic, the wine has a fleshy texture that gives way to a spicy and vanilla finish, adding complexity and length to the experience.
Food and Wine Pairing:
This wine pairs wonderfully with rich, savory dishes such as duck breast, confit, hare stew, or leg of lamb. Its bold flavor profile makes it an ideal match for hearty, flavorful meals. It also pairs beautifully with olives.
14.5% alcohol, giving the wine a robust and powerful character.
Aging Potential:
This wine can be enjoyed now but has aging potential of 8 to 10 years, allowing it to develop further complexity with time.
