The Wine:
Cuvée Jean-Claude Dreyfus is a concentrated and expressive red, crafted from mature vines with an average age of 40 years. This is a full bodied, structured wine that reflects both the strength of its terroir and the careful, traditional approach taken in the cellar.
Winegrowing:
The vineyards lie on clay limestone soils with a high proportion of stones, located on the first foothills of the Montagne Noire. Sourced from the Cazelles terroir in the commune of Aigues-Vives, these old vines naturally limit yields to around 35 hl per hectare, producing fruit of depth, intensity, and balance.
Winemaking:
The grapes are hand harvested and vinified using carbonic fermentation of whole berries in epoxy lined concrete tanks, enhancing aromatic purity and fruit expression. The wine is then aged for 18 months in 400 litre oak barrels, allowing the structure and tannins to integrate while preserving freshness and character.
Tasting Notes:
Appearance: Deep purple with ruby highlights, showing concentration and intensity.
Nose: Intense and expressive, with aromas of blackberry, pepper, and bay leaf.
Palate: Full bodied and structured, offering dark fruit flavours alongside subtle floral notes. The tannins are present and well defined, leading to a long, lingering finish.
Pairing:
A natural match for red meats, game dishes, spicy cuisine, or a well chosen cheese platter.
