he Wine:

This AOC Minervois Rosé is a vibrant and characterful expression of the appellation, combining freshness with a rounded, generous texture. Crafted using the saignée method, it offers both depth of flavour and brightness, making it a versatile choice at the table.

Winegrowing:

The vineyards are located on the clay limestone soils of the Minervois, rich in stones and set on the first foothills of the Montagne Noire in the commune of Aigues Vives. These conditions promote healthy ripening while retaining natural freshness and balance in the grapes.

Winemaking:

The grapes are mechanically harvested, with vinification carried out using the rosé de saignée method. Fermentation begins with Cinsault, before Syrah and Grenache Gris are added after cold settling. Vinification takes place in 50 hectolitre epoxy lined concrete tanks. Malolactic fermentation is avoided to preserve freshness, vibrancy, and aromatic clarity.

Tasting Notes:

Colour: Grenadine pink with bright, vivid highlights.
Nose: Elegant and gourmand, showing soft red fruit with a subtle amyl note.
Palate: Full and luscious yet well balanced, with a refreshing, rounded and fruity character. A tangy structure carries through to a long, lively finish.

Pairing:

A highly versatile rosé, ideal with a wide range of dishes including red and white meats, poultry, tapas, exotic cuisine, shrimp pad Thai, and cheese platters.
