The Wine:
This vintage dated Viognier Is the South Of France in a bottle! It is crafted from carefully selected grapes grown in the Languedoc, chosen for their freshness and aromatic clarity. Made in a pure, unoaked style, the wine focuses on balance and precision, allowing the varietal character of Viognier to shine.
Winegrowing:
The vineyards benefit from Mediterranean influence and well drained soils, supporting slow, even ripening. Grapes are hand harvested to preserve quality and integrity, with viticulture guided by High Environmental Value certification, reflecting a commitment to sustainable vineyard practices.
Winemaking:
Following hand harvesting, the grapes are fermented and matured in stainless steel tanks at low temperatures. This gentle approach preserves freshness, aromatic purity, and texture. The absence of oak ensures the wine remains clean and expressive, highlighting fruit and floral notes.
Tasting Notes:
Colour: Pale gold with subtle green highlights, bright and clear in the glass.
Aroma: Fresh and aromatic, with floral notes complemented by gentle spice, hints of gooseberry, dried fruits, and a soft honeyed nuance.
Palate: Rounded and well balanced, offering flavours of gooseberry and dried fruits supported by freshness and a subtle mineral edge. The finish is persistent, clean, and softly honeyed.
Pairing:
A natural match for Fish, chicken dishes, lightly spiced cuisine, and creamy sauces. Equally enjoyable on its own, served chilled.
