The Wine:

This vintage-dated Pinot Noir is crafted from a special selection of elevated vineyard plots, carefully chosen to highlight the unique influence of the Limoux microclimate. The result is a wine that offers a rich yet fresh profile, showcasing the best qualities of this noble grape.

Viticulture:

The vineyards, located on the foothills of the Pyrenees, thrive in clay-limestone soils, which contribute to the wine’s depth and minerality. The selection is dedicated to "still" wines, with yields of less than 50HL/HA to ensure exceptional quality.

Winemaking:

This Pinot Noir undergoes cold pre-fermentation maceration to enhance its flavor extraction, followed by soft, slow, and delicate pressing (at less than 1.2 bar). The wine ferments at low temperatures to preserve its fresh, vibrant aromas. Aging on fine lees during winter adds complexity, while the wine is made without oak aging, letting the fruit character shine.
